The multi microcapsule (MULMICAP) concept for food fortification has been developed which allows for the encapsulation of two or more functional compounds in microcapsules. The MULMICAP concept is based on a microstructure engineering approach which couples the fields of flow processing, micro-fluid mechanics, interfacial sciences, human nutrition, and medicine. The multi microcapsule production is based on continuous microprocessing including dispersing, cold spraying, coating, and mixing operations. The multi microcapsules are in general spherical with a diameter of 20 to 100 microns, which may contain different Functional Nutritive Compounds (FNC).
